Al Fresco with Autumn: Peach Berry Cobbler

I don’t about you, but I am ALL about the fresh fruit right now. Peaches are back, blueberries are rockin’, and strawberries taste like they’ve been dipped in sugar. Thank you summer season. This recipe is a throwback to my childhood, when our neighbor would prepare it for all the kids, after a day’s play in the pool and a poolside BBQ. The caramelized sugar renders the outer crust a chewy, sweet piece of nostalgic heaven. Toss your guilt to the curb and enjoy some summer decadence.

Peach Blueberry Cobbler
Time: 10 min prep, 35 min cooking
Serves: 6-8


  • 1 cup flour
  • 1 1/4 cup sugar
  • 1 1/2 tsp baking powder
  • 3/4 cup milk
  • 1 stick butter
  • 1.5 cups fresh fruit (berries and stone fruits works best!)


  1. Preheat oven to 350 degrees
  2. In an 8×8 baking dish melt the stick of butter
  3. Mix flour, baking powder, milk and one cup of sugar in a separate bowl, then pour into the pan over the melted butter
  4. Evenly disperse fresh fruit on top
  5. Sprinkle remaining sugar across the top
  6. Bake for 32-36 minutes, until edges are light brown
  7. Serve in 2-3 inch squares alongside vanilla bean ice cream
  8. Dive in and ENJOY!
