Summertime Ice Cubes!

Summer is here and that means lots of parties! Jazz up even the simplest beverages for your guests by making fruit and flower ice cubes! It’s so simple but adds just the right amount of color and flavor.

Ingredients:

  • ice cube trays
  • fruit (blueberries, lemons, raspberries, blackberries or any fruit your like!)
  • water
  • flowers (edible ones such as orchids, snapdragons or pansies)

TIP: only use flowers you have grown to ensure there are no chemicals!

Steps:

  1. Squish fruits/flowers into each square of the ice cube tray
  2. Fill spaces with water & freeze
  3. Serve to guests on a warm summers night & enjoy!

Kid-Friendly Spin on the Quesadilla: Mango Veggie

Quesadillas are quick, yummy and the perfect finger food for kids. Check out this easy quesadilla recipe made of mango, veggies and cheese. For protein, throw in some grilled chicken!

You’ll Need:

  • Olive Oil Spray
  • 3 whole wheat tortillas
  • 1 mango, washed, peeled and diced
  • 1 red bell pepper, washed and diced
  • 3 cups of baby spinach, washed
  • Sour cream for dipping
  • 3 cups of shredded cheese

Step-by-Step:

  1. Coat a medium skillet with olive oil spray and heat on medium-high.
  2. When the skillet is hot, place one tortilla on the pan and sprinkle on some cheese.
  3. Sprinkle 1/3 of the mango, 1/3 of bell pepper and 1 cup of spinach.
  4. Use a spatula and fold the tortilla in half. Reduce the heat to low and let it cook for another minute.
  5. Remove the quesadilla from the skillet and cut into triangles.
  6. Serve with a dollop of sour cream.

The best part of this recipe is that you can get creative or use veggies and fruits your kids will love. Try some brie cheese with diced up apples and spinach.

Grilled Corn w/ Rosemary & Lavender

Time: 25 minutes

Serves: 4

Ingredients:

  • 4 ears of corn
  • 1/3 stick butter – melted
  • 1/2 tsp fresh rosemary – chopped
  • 1/2 tsp fresh lavender – chopped

 Instructions

  1. Start your grill and set to medium flame
  2. Combine melted butter and chopped herbs in a small bowl
  3. Pull back corn husks and remove silk
  4. Rinse corn, making sure to fully moisten husks
  5. Evenly brush corn kernels with herb/butter mixture
  6. Pull husks back into place
  7. Grill corn for 15-18 minutes, turning occasionally to prevent burning
  8. Remove husks and dive in. Be careful, corn will be hot!

Summer Readiness

Memorial Day is this weekend!

Let’s talk summer because that’s what Memorial Day signifies right? The official start to the summer season. It is the day after which it’s okay to wear white without being judged. It’s the weekend pools across the nation start their official come-pee-in-us season. It’s a wonderful time of year! AND the kids are home ALL day EVERY day!

So here’s a Dumb Mom’s Guide to Summer Readiness: Do’s and Don’ts to Ensure You Don’t Lose Your Mind When Your Kids Crash Your Spot for the Summer!

DO:Snag yourself some cool summer gear! And by gear I do not mean Styrofoam swim noodles and arm floaties. I mean some cute summer dresses, stylish sandals, and perky accessories for mom!

DON’T: Bother worrying about what your kids are going to wear unless you’re going on vacation or to a special event then of course they are going to need some acceptable summer attire. Otherwise, summer should be your frugal season when it comes to kid clothing!

DO:Get yourself an amazingly delicious, shamelessly easy, go-to summer recipe. Mine is salsa. And, having this recipe in my arsenal secures me an endless summer of cook out invites!

DON’T: Show your I-can-throw-a-rockin-party-cards too early in the season. Personally, I don’t have any rockin-party cards to show. But if you do, I say you keep them on the down low until Labor Day!

DO: Make sure you have access to a lifeguard inhabited swimming pool. Head to the pool, stake out a spot on a loung-y pool chair, slide on your dark glasses and pretend to watch your children frolic in the pool for a few hours while you actually sleep off and on. As long as you have snacks and wake up periodically to dole them out along with a healthy dose of sun protector no one will be the wiser.

DON’T: Sign yourself up for any play dates at your house.Tell the kids to tell their friend’s parents to drop them off and pick them up at the swimming pool.You can still catch your afternoon nap, your kids will have something to occupy their time, if someone gets hurt you can blame the on-duty pool officials, and you can buy everyone ice cream from the truck before they go home making yourself look like the hometown hero you always knew you would be!SCORE!

Red White and Blue Fashion

Memorial Day is this weekend, which means its time to kick off summer! Whether your at a barbecue, on a boat or spending it in the city it’s an excuse to put together an awesome outfit! But what to wear?! In honor of this holiday you should incorporate red, white and blue into your ensemble of course!

Going for a sail? Try a cute blue and white plaid sundress. Tye a red red belt around your waist to break up the pattern. Add red flats or wedges and your all set!

Strolling in the city? This entire ensemble is super cute and looks effortless! Grab a red maxi skit,a plain white T, a little navy jacket or sweater and there you have it! Throw on a pair of comfortable navy heals, flats or wedges and your look is complete! The red maxi skirt will really help your outfit pop!

Family brunch? A blue and white stripped dress, red flats and a red jacket doesn’t get more patriotic than this ensemble! Add a tan/neutral colored bag to balance your outfit.

Barbecue? GO BOLD! Red pants always make a statement so add a simple t-shirt and neutral accessories for the perfect backyard attire.
