Dine with Diana: Ellen DeGeneres’ Chef Gives Up Her Fave Vegan Tacos Recipe!

Monday we featured a Labor Day Grill recipe and got a great comment asking, “Hey, what about us vegetarians?”

I love that question what with me being “vegan-ish” – you know, except when I’m not. So, I thought this would be the perfect chance to share a great recipe for us veggie-lovers.

Plus, it’s tacos! Who doesn’t love tacos? They are fast, easy and delish! Perfect for busy people getting used to the new fall routine!

Carnivores in the family?  You still have all your bases covered here. Just add chicken, steak or ground beef and those carnivores are good to go!

A few years ago, Ellen featured her personal chef Roberto Martin on her show and cooked up these tacos!

Vegan Taco Recipe (by Ellen DeGeneres’ Chef, Roberto Martin)


  • 1 package Yves Meatless Taco Stuffers or other meat substitute (Bring to simmer with 1/2 cup of water)
  • 1 can refried beans (Heat in saucepan)
  • Daiya Vegan Cheese
  • Vegan Sour Cream (Chief Mom loves Tofutti brand)


  •  1 cup chopped tomatoes
  •  1/4 cup minced red onion
  •  1/2 bunch chopped cilantro
  • Onion powder, garlic powder, cumin, lime juice, & kosher salt to taste


  •  2 small avocados – scooped.
  • Onion powder, garlic powder, cumin, lime juice, & kosher salt to taste


  • Heat tortilla over open flame and prepare taco (or enjoy in hard shell).
