I’m all about whatever I can get out of the kitchen with little time and effort as possible – but you know my rules, it has to work for anyone in the family and be healthy.

Yogurt parfaits are perfect for breakfast, snack or even dessert. And just because the Fro Yo craze has taken over the planet doesn’t mean you have to spend a million dollars for a little yogurt treat! Make these fun parfaits at home and if it really must be frozen – just freeze the Greek yogurt before making – yes, you really can do that! Try it, it’s fun!

Diana’s Super Fast & Healthy Yogurt Parfait

Ingredients:

  • Greek yogurt – I use Fage Total 0%
  • Whatever fresh fruit you have on hand sliced
  • Fresh berries or frozen work just fine too
  • All natural, no-sugar added granola or Kashi 7 Grain cereal for most healthy
  • A few chocolate chips for fun and to sprinkle on top- can also use shaved coconut or carob chips too

Directions:

  1. All you have to do is take your ingredients and layer, layer, layer!
  2. Of course it’s more fun if you can see the layers on a clear glass or mug, but certainly not a must. My toddler just stirs hers all together in the end anyway!

5 Easy Steps to Cutting Disposable Diaper Costs


One of the big concerns I hear from expectant moms is diaper costs. I totally understand.  A baby can go through a lot of diapers and it is a cost that can last up to 4 years or more per child if you take training pants into consideration.


With my first son, who was born in 2007, I was not at all savings savvy. However, I learned some great savings techniques while I was pregnant with my second son in 2009. I have never paid full price for a pack of diapers since.
Cutting your disposable diaper costs in half is really quite simple. You will find it takes a minimal amount of time and effort.

1. Wait for a Sale. Any given week you can find sale on diapers.  I do not think I have ever seen a week when I couldn’t find diapers on sale somewhere. If you simply wait for a sale you can save a $1, $2 or more per pack.

2. Embrace the coupon. If you can hold out for a sale and if you also have a coupon then you can really see your savings start to add up. A Manufacturer Diaper coupon generally ranges anywhere from $1.00- $3.00 off per pack. Most coupons just require Jumbo Pack or larger. (Jumbo is the smallest size other than a travel/trial size) I usually find I can get the best bang for my buck with the Jumbo Pack (with coupons).  Also, many stores release store coupons for a specific brand that CAN be combined with a manufacturer coupon for additional savings.
For example:If you have a Manufacturer coupon for $2/1 pack of Pampers and a Publix Store Coupon for $2/1 pack of Pampers, then you could combine those coupons to save $4 off your Pampers Pack at Publix)

3. Do the Drugstore Rewards Programs. Rite Aid, Walgreens and CVS all have Rewards Programs available which can mean BIG savings for consumers. Drugstore Sales run weekly (generally Sunday- Saturday). Check your circulars to see if they are offering any “Store Rewards” on diapers this week. These store rewards are all a bit different, but all will reward you with a certificate you can use to get money off a future purchase.
For Example:Let’s Say Walgreens has Huggies Jumbo Packs sale priced at $8.99
AND you get back $2 in Register Rewards to use on a future purchase.
So really you are getting that pack for $6.99
Now…Let’s say you also have a Huggies Manufacturer Coupon for $2.50/1…then really you would only be paying $4.49 for a Jumbo pack of diapers after your rewards and coupon.  That is over a 50% savings!

4. Be an Amazon Mom. I have truly learned to love Amazon and Amazon Mom.  Amazon Mom members receive exclusive discounts on a variety of products and categories. Benefits include: 30% off select diapers and wipes, and save 15% off (nearly) everything else. You can set up automatic delivery with Subscribe & Save to and also get free standard shipping (which you can cancel at any time.)

5. Take Advantage of the Diaper Rewards Programs. Both Pampers and Huggies have loyalty points rewards programs. You find the codes inside diaper and wipes packages and also online.  Enter the points into your account online and redeem the points for prizes, gift cards, or even free diapers. Pampers Rewards program is called Pampers Gifts To Grow, and Huggies has a program called Huggies Enjoy the Ride Rewards

My goal is always to pay less then $.20 per diaper (Actually…I prefer around $.16-$.18) 99% of the time I am able to get my diapers at least 50% off the retail price…. when a pack of jumbo diapers retails for around $10 and a child can easily go through 4 jumbo packs or more per month….that can mean a $20 or more monthly savings or an extra $240 + savings every year with very little time or effort spent. How to: Camouflage Tan Lines

As you’ve probably noticed, it’s hot out there. No longer does it take an afternoon-long beach trip to develop a sun kissed glow…and the tan lines that go with it. So, if you’ve been attempting to create a warm weather wardrobe based on where those unflattering light patches appear, it’s time to make your lines a whole lot less visible. Here are five ways to aid your skin on its return to one shade.

1. Exfoliate. From the supermarket to the specialty store, body scrubs are readily available. All you need to do is add them to your summer shower routine. Rub a few drops into skin each time you head to the tub to remove the dead cells around tan lines.

2. Massage with Baking Soda. Dampen any affected areas and start scrubbing. This is probably the simplest and most cost-effective way to jumpstart your skin’s healing process.

*These first two methods also help to remove a fake tan gone wrong!

3. Apply Aloe Vera. Moisturizers containing aloe vera will help you regenerate skin cells and soothe burned skin.

4. Invest in Self-Tanner. These lotions are much safer than attempting a return to the sun. Take a trip to your nearest drugstore and match your tanned skin to a similar self-tanner.

5. Switch Your Sunscreen. Instead of slathering on your usual SPF 30 before you hit the streets, use a higher SPF lotion on areas that are already tan and a lower SPF lotion on areas that could use a little bronzing.

Dine with Diana: Pancakes

Breakfast is my favorite meal of the day. My mom used to let us have pancakes as “Breakfast for Dinner” on the nights when my dad would travel for work. I know that’s not such a unique concept, but to us it was a big deal and certainly created special memories!

So, in honor of the fun little things my mom used to do to keep us kiddos interested, entertained and enthused, I’m adding my own modern-mommy twist to my most favoritist pancake recipe ever!

Mine are definitely healthier- but hers are still unbeatable- mostly because her secret is to make each of us just ONE big pancake rather than a traditional stack- and I’m telling you, it makes all the difference! Since it was her birthday this week- this one’s for you mommy!

Diana’s Sweet Mommy’s Pancake Recipe – And My Healthier Version Ingredients (makes 2 large pancakes)

  • 1 c. buckwheat pancake mix (mom uses traditional pancake mix)
  • ½ c. rice milk (I like rice milk- but of course mom uses whole or 2%- try any milk you like)
  • 2 egg whites (mom uses 1 whole egg)
  • ½ tablespoon raw sugar (mom uses regular white granulated sugar)
  • 1 tablespoons lemon juice
  • 1teaspoons baking powder
  • Seasonal Fruit to Top or Pure Maple Syrup (my mom would use good ole pancake corn syrup and confectioners sugar and more butter) KEY TIP: The key to making 2 large pancakes is to make one pancake per omelet skillet. Using a griddle will not give you the same result!

Directions:

  1. In one small bowl, mix the lemon juice, baking powder and sugar – you’ll see it bubble and that’s what adds extra ‘oomph’ to these pancakes.
  2. Mix all remaining ingredients in a large mixing bowl and add the lemon juice mixture in separately after batter is mixed and stir again.
  3. To make both pancakes simultaneously – have 2 burners going on med-high heat each with its own non-stick omelet pan heating with non-stick spray and peanut oil.
  4. My mom uses a couple tablespoons of butter/margarine in both her pans until almost melted.
  5. When the pans are heated, but not too hot or if using butter- when its almost melted pour ½ batter to fill each omelet pan.
  6. Wait until the air bubbles in the batter pop and the bottom of the pancake is fairly TIP: Because its just ONE big pancake, you must make sure the bottom is firm enough before you flip it, but at the same time make sure you’re not burning it.
  7. Once each side of the single pancake is golden – its time to serve immediately.
  8. Top how you like. I love fresh fruit and pure maple syrup.
  9. When I’m at my mom’s house- I just pour on all the gooey traditional syrup and add more butter (we all have our days) In the end- either the healthier version- or my moms version- are sure to be a hit at your house- regardless of whether its breakfast for dinner or breakfast for breakfast 😉
