Festive Recipes for Your Fourth of July Party

Here are three easy and delicious ways to incorporate some red, white, and blue into your July 4th diet. Totally kid-friendly, your guests and their little ones will scoop these up sooner than you can say the Pledge of Allegiance.

Revolutionary Berries


Ingredients:

  • 12 ounces white chocolate chips
  • Blue sugar or edible glitter
  • Strawberries
Instructions:
  • Melt 12 ounces of white chocolate chips in a microwave according to the package directions (make sure the container and the berries are dry; even a little moisture will alter the texture of the candy).
  • One at a time, dip strawberries into the chocolate and then into blue sugar or edible glitter.
  • Set them to harden on waxed paper.
  • Makes 35 to 45 decorated berries.

Frosty Fireworks (Flavored Ice)

Ingredients:

  • Red or blue fruit-flavored beverage
  • Seltzer (flavored or plain)

Instructions:

  • Simply fill an ice cube tray with a red or blue fruit-flavored beverage (such as Powerade, Gatorade, or Kool-Aid) and let the cubes freeze solid.
  • Then drop three or four colored cubes into each glass, pour in flavored seltzer water or clear soda, and watch the special effects.
  • As the cubes melt, colored bubbles will swirl through the seltzer.

Patriotic Petit Fours

Ingredients:

  • 12 1-inch cubes of seedless watermelon
  • 1 cup cream cheese frosting
  • 12 red and/or blue candied almonds
  • Red, white and blue star-shaped sprinkles

Directions:

  • Arrange the watermelon cubes on a serving platter.
  • Place the frosting in a Ziploc bag and trim off a bit of one bottom corner.
  • Decoratively pipe the frosting onto each watermelon cube. Place an almond at the top of the frosting on each petit four.
  • Decorate with sprinkles and serve on red, white and blue table decor.

My Daughter’s New Favorite Accessories: Ladybugs and Lullabies Hair Clips

Dine with Diana: Pasta Anyone?

Believe me, I know what it’s like to have to cook for the family after an already exhausting day of work, cleaning, and picking up the kids from camp. That’s why I’ve grown to stow a few quick and simple recipes up my sleeve when time is tight and the tots are hungry.


Here’s a pasta dish the whole family can enjoy. Best of all, it doesn’t take hours to prepare and is super easy to throw together – I’ve been doing it since high school when my parents had to work late.  Keep reading and you’ll discover my secret ingredient!

Moms, get ready to savor this dish and all the time you save!

I use whole wheat pasta and jarred sauce — the one with real ingredients, so that means no fillers, no sugars.  You can also puree some leafy greens and “hide” it in the sauce.

  1. Heat olive oil in a pan and saute onions and garlic.
  2. Add ground chicken, it’s healthier and has less fat than beef. Cook this until it is slightly browned.
  3. Throw in the sauce and pureed leafy greens.
  4. Season with salt, pepper and oregano.
  5. Now get ready, this is the secret ingredient: BBQ sauce.  Add a dash of this into the mixture and stir all together.
  6. Add fresh Parmesan cheese and fresh basil on top and serve while hot!

Here are some more tips:

  • Use penne or spiral pasta and spaghetti gets too messy
  • Try using ground turkey as an alternative

8 Tips for Getting Your Kids to Eat Vegetables

One of the biggest eating struggles a parent has is getting kids to eat vegetables. Overall, my boys are pretty good about eating vegetables. Below are some of my tips on how I got my boys to like vegetables.

Tips for getting kids to eat vegetables:

  •  Offer a variety of vegetables. When the kids go grocery shopping with you let them pick some of the items from the produce department.
  • Get the kids involved in growing a vegetable garden. Vegetables are a lot more tempting if kids are involved in the growing process. Plus homegrown vegetables taste so much better!
  • If they don’t like cooked vegetables, let them try raw vegetables and vice versa. My boys like broccoli lightly steamed but not raw.
  • Keep trying. It takes several times for kids to accept new foods. Even if my child didn’t like the item the first time, I keep putting it on their plate. I encourage them to taste the item again and I suggest they should try something new.
  • Let the kids dunk veggies in a sauce or a dip. Ranch, guacamole, salsa or a sour cream dip are good options.
  • If your child is really objectionable to vegetables, you can make purees and then add those to recipes. The Sneaky Chef or Deceptively Delicious have great recipes for using purees.
  • Keep vegetables readily available. If my kids want a snack before dinner, I try to give them fruit or a vegetable. Baby carrots, snap peas, cucumbers and grape tomatoes are our favorite vegetable snack.
  • Be a good example! I know this is a tough one! If you eat your vegetables, your kids will too. This is something that my hubby has really been working on. I have to remind him almost every night to put vegetables on his plate. He doesn’t mind them- he just prefers other items!
