Meet Jane: Our Mom of the Week!

Congratulations to our Mom of the Week!!! Jane is from Delaware and she is a proud mom to John, 7 and Anna, 2.  Jane’s story is inspiring to all moms and women out there.  After two miscarriages, she found out she was going to have quadruplets!  However, tragedy hit the family.  Her babies were 14 weeks early and weighed less than 6 pounds each.  She lost her son James, who was only 5 days old.  Anna, Emma & John eventually came home (3 months, 6 months, 3.5 months) and all with differing disabilities: Anna has Down Syndrome & Emma and John were/is legally blind.  At the age of 2, Emma was diagnosed with pulmonary hypertension; she passed away unexpectedly in her sleep at 3 ½.

Jane’s human strength truly shined through when she bounced back with hope.  She cherishes her two remaining children each and every day.

Oscar Night – Come Party with Totsy & Brad Pitt!!!

It’s Oscar weekend!  The Oscars are all about glam, fashion, celebs and fun so why not bring some of that excitement into your own home?  Host your own Oscar party with money-saving hors d’oeuvres, cocktails (and mocktails), and fun Oscar games.  Below are some of our fav drinks and snacks.  Enjoy!

THE BRAD PITT COCKTAIL – why is it called the Brad Pitt? Cause it’s refreshing and mouthwatering, just like the man himself =)

  • 1 fresh lime
  • 2 fresh cucumbers
  • 1 pinch of fresh mint
  • 2 ounces Vodka
  • 3 ounces of Tonic Water

Directions

  1. Squeeze juice from 1 lime into a cocktail shaker filled halfway with ice cubes.
  2. Add 2 lime wedges, 3 thinly sliced cucumber slices, a handful of mint, vodka, and Tonic Water to shaker.
  3. Pour contents into tall cocktail glass.

THE RED CARPET FIZZ MOCKTAIL – Love the bubbly, but don’t like the alcohol? Perfect for kids, too!

  • 3 parts Sparkling Cider
  • 1 part Cranberry juice
  • 1 Raspberry

Directions
Pour ingredients into a Champagne Flute and then garnish with a raspberry.

Your BACON WRAPPED DATE for the Oscars – Who doesn’t like savory and sweet?  This is the ultimate combo!

  • 18 (1- by 1/4-inch) sticks Parmigiano-Reggiano (from a 1/2- lb piece)
  • 18 pitted dates
  • 6 bacon slices, cut crosswise into thirds

Special equipment: 18 small bamboo picks

Directions

  1. Put oven rack in middle position and preheat oven to 450 F.
  2. Stuff 1 piece of cheese into each date, then wrap 1 piece of bacon around each date, securing it with a pick. Arrange dates 1 inch apart in a shallow baking pan.
  3. Bake 5 minutes, then turn dates over with tongs and bake until bacon is crisp, 5 to 6 minutes more.
  4. Drain on a paper bag or parchment. Serve immediately.

ROASTED CHICKPEAS (serves 8) – Not interested in bacon? How about a nice vegan snack? YES PLEASE!

  • 2 (12 oz) cans chickpeas – drained
  • ¼ cup olive oil
  • Salt (optional)
  • Garlic salt (optional)
  • Cayenne pepper (optional)

**Although the seasonings are optional, I highly recommend the garlic and cayenne pepper because it adds a nice kick to the recipe.

Directions:

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Blot chickpeas with a paper towel to dry them. In a bowl, toss chickpeas with olive oil, and season to taste with salt, garlic salt, and cayenne pepper, if using. Spread on a baking sheet, and bake for 30 to 40 minutes, until browned and crunchy. Watch carefully the last few minutes to avoid burning.

Frugal Outdoor Fun!

Every year about this time, I start to anticipate the arrival of Spring & Summer. There is just something about being outside enjoying time with your kids that makes this time of the year one of my favorites. I thought it would be fun to share with you a few fun and frugal ways to enjoy this time of the year.

Plan a Picnic – Head to your local park and spread out a blanket. The kids will enjoy running around and the best part is after lunch is finished, there’s no mess to clean up.

Take a Nature Walk – Grab a Sand Pail and take a walk around the neighborhood. Let the kids collect items they find and create a show-and-tell board when you get home.

Grab a Sprinkler – One of my son’s absolute favorite things to do during the summer months is to run around in the sprinkler. You can have hours of fun and stay cool all at the same time.

Hit the Drive-In – You typically pay for a drive-in movie per car, not per person, so this can be a great way to save a little money and have some great family time under the stars.

Geo-caching – If you have older kids, then you might look into Geo-caching. This is a fun, free activity (similar to a Scavenger Hunt). You can do this in most local areas.

Find a Beach – Most local beaches and lakes have public access areas where you can spend time swimming and relaxing. Plan to bring along your lunch and don’t forget the water!

Get Active – Bicycle Rides are a great way to spend time together and get in some exercise. You can also pick up a new sport as a family; try tennis or volleyball for fun family sports.

If you find yourself searching for activities on a rainy day, then make sure you check your local library’s schedule. You can often find an abundance of free activities and programs for kids during the summer months.  Also, grabbing a book and curling up on the couch is one of my favorite ways to relax on a rainy day.

Regardless of the outdoor activity you choose, remember that it’s all about spending time together as a family. You don’t have to spend a lot of money to enjoy your time together. Spring and summer are great seasons to get outside and enjoy the sunshine.

Spring 2011 Make-up Trends

We at Totsy Fashion Week NYC, so to continue with our Spring Runway trends, we’re talking about make-up this week!  Because, really, make-up is the one thing you wear everyday (well almost) and we all  know thanks to L’Oreal and Project Runway, that make IS a big part of a fashion show.

MAKEUP LOOKS THAT WILL BE BIG THIS FALL:

BOLD LIPS:  Bold lips are a huge must this spring and summer.  The colors can range from red, to orange to hot pink.  To make your lips really stand out, choose a matte finish.  Complete your look with barely-there make up and a few heavy coats of black mascara.  Your lips should be the focal point. Pucker up!

NATURAL LOOK:  Natural makeup is seen often on the runway.  It requires very little effort but still looks fantastic.  Always start on a clean canvas and apply an SPF moisturizer.  Create flawless looking skin with concealer to cover any blemishes and dust translucent powder all over your face to set it.  Apply a subtle, pink blush to your cheeks for a little color, two swipes of mascara after curling your lashes and a natural looking lipstick or gloss to top it all off.

VIBRANT EYES:  Vibrant eye makeup is another spring runway trend that is sure to attract attention.  Create flawless skin with foundation and concealer.  Then, apply your favorite bright colored eye shadow; try red, orange, blue or green.  Line your upper lids with black eyeliner and coat lashes with two swipes of mascara.  Your lips should be a nude shade as you want the eyes to really stand out.  Try this fun look for a holiday event or party.

SMOKEY EYES:  Smokey eyes have long been a staple on the runways.  With a little practice, you’ll be able to pull of this sexy, smoldering look as well.  This dark eye look is glamorous when paired with nude lips.  Use black, greys or dark blue eye shadows.  Visit here (http://beauty.about.com/od/allaboutyoureyes/ht/smokeyes.htm) to learn how to create smokey eyes.

How To: Make Eggs in a Basket

Before watching V for Vendetta, I’ve never heard of, let alone seen what an Egg in a Basket was.  I was intrigued instantly and had to learn how to make it!  After all, Natalie Portman devoured the comfort food like it was the best meal she’s ever had in her life.

Egg in a Basket is simply an egg that is fried in a bread slice that has had a hole cut out for the bread.  Let your kids help you cookie-cut the center of the bread and drop the egg in.  Try using fun shapes like hearts and stars – just make sure that it’s a small cookie cutter and does not cut out too much of the slice of bread.  Any time your kids help in the preparation of food, they’ll be sure to eat it!

Things You’ll Need:

  • Frying pan or skillet
  • Spatula
  • Cookie cutters – try fun shapes

Ingredients:

  • Eggs
  • Butter
  • Sliced bread
  • Salt, pepper, maple syrup – optional

Steps:

  1. Use cookie cutter to cut a hole in the middle of the sliced bread.
  2. Butter both sides of the bread before adding to skillet which is over medium heat.
  3. Put buttered bread into the skillet.
  4. After on side of the bread is nice and brown, flip it over with the spatula.
  5. Crack the egg into the hole and check to see if bread is toasted, if so, flip it over to cook the other side of the egg for a few seconds.
  6. When the egg is cooked to your preference, plate it and sprinkle some salt and pepper over it.

Just a few tips:

  • When you decide to crack the egg into the bread is really personal preference.  It depends on how you like your eggs to be cooked.  Some people prefer to add the egg into the hole as soon as the bread is in the pan.  If you add the egg sooner, it will have a softer, chewier texture.  You can also break the yolk after it’s in the “basket”.  This will cause the flavor of the egg to be more absorbed into the bread.
  • You can add the piece of bread that was cut out back onto the top of the egg if you like.
  • Try sprinkling some grated cheese onto the egg.
  • Adding maple syrup will add a “french toast” touch to your creation.
